What are your pet peeves about Podcasts?

As I'm developing my podcast, I am wondering what you, my listeners, dislike about other podcasts you listen to.

One podcast that I enjoy has been grating my nerves lately, because the 'bumper' music is too long. I can appreciate the stylistic audio segue between one part of the podcast to another, but that music should only be a few seconds. Certainly not more than about 20 seconds. I'm not listening to the podcast to partake in the broadcaster's choice of music. I find my self wondering, "What the hell am I listening to?" I don't want to fast-forward, because i'll find myself rewinding* to make sure i didn't miss something.

*Can you even USE the term "rewind" with digital media? :-)

So...What bugs you?

#005 Boosting Nutrition in your Favorite Foods

Sorry about the occasional gargling-sounds, it's an issue with shoephone, and I will try to avoid using it again for future podcasts.

Notes:

  • Make a waldorf salad: diced apples, walnuts/pecans, diced celery, red seedless grapes and vanilla yogurt (instead of whipped cream and mayonnaise) sprinkle with nutmeg
  • Sneak in color-coordinated food (cauliflower in mashed potatoes)
  • Switch to a better version of the food (whole wheat bread instead of white bread)
  • Incorporate a bit of seaweed (wakame) into soups and stews
  • Add beans to boost protein, and a good source of both soluble and insoluble fiber.
  • Add nuts, seeds, fruits, and flax-seed oil to foods you already eat
  • Switch to reduced fat milk (whole --> 2% --> 1% --> Fat Free --> Enriched Rice/Soy Milk) OR substitute a portion of the whole milk with soy milk (add 1/4 cup soy to 3/4 cup cow milk)

#003 Choosing Cooking Equipment - Pots & Pans

My first talkshoe podcast! It's obvious, I'm afraid, but I'm learning. I hope that the more I podcast, the better your listening experience. *grin*

Notes:

  • Knives - Make sure that the grip is comfortable TO YOU.
    Make an investment, and choose carbon steel.
    Get longer knives for more accurate, attractive cuts without sawing.
    Avoid "eversharp" blades.
    Ask for a discount if you're buying a whole set.
  • Get a decent peeler, (oxo is my favorite brand) and get a nice melon baller (parisienne scoop)
  • Cookware - Either spend good money on good pots & pans, OR spend less, but plan to replace them sooner.
    Choose the material that best suits what you intend to cook. (browning/omelettes/stovetop-to-oven)
    Buy your cast iron from garage sales/resale/thrift stores, chances are they'll be very well seasoned!

    Season cast iron by putting some high-temperature fat (peanut oil/crisco/caul) on the inside & outside, and put it in a 500ºF oven for 30 mins. Turn the oven off, but don't open the oven door until it's cool.
    When you clean cast iron using water, make sure you heat it to smoking afterwards, to make sure you burn off the moisture.
  • Enameled cast iron (Le Creuset) is great for making stews and rich tomato sauces.
  • Food Processor - If it takes longer to clean the food processor than it would to just get a knife and cut the food, then just use your knife!
    it's great to use when you're making dips (like hummus)
